In my search for this dessert bar by Chef Janice Wong, who was awarded as Best Asia Pastry Chef in 2013, I went to the hip dining hub of Holland Village.

As the name itself implies, 2am:Dessert Bar only opens from 6pm to 2am daily except Sunday. After a dinner somewhere in Singapore on weekend, I went there around 12 midnite and to my astonishment, the spot was still quite full. We were lucky to get a seat in a bar without making reservation ahead of time. And yeayy..the chef herself was there, monitoring and preparing the delicate dishes for the guests.

Even though the place was a bit tight, it felt sophisticated and elegant like the desserts that we were going to be served later on that night.

Shades of Green – pistachio sponge, coco mousse, pandan gula malaka custard (S$ 15)

Cheese Avalanche – biscotti, sous vide cantaloupe, candied figs (S$ 19)

Plum Cassis – cassis bombe, elderflower yoghurt foam, plum liqueur, bamboo shoot (S$ 20)

Each one of these refined and stylish desserts was served in pairing recommendation with certain wine or champagne. I applauded Chef Wong’s genius creativity to develop such intricate yet beautiful dessert creation. Although it might be considered a bit avant garde to some, I find them to be highly fulfilling.
